- A pinch of asafoetida (hing)
- 1 sprig curry leaves
- 1/4 cup grated fresh coconut
- Salt to taste
Equipment:
- Bowl for soaking
- Pressure cooker or pot
- Skillet or wok
Instructions:
- Soak the peanuts: Rinse the peanuts and soak them in enough water to cover them for at least 4 hours or overnight.
- Cook the peanuts: Drain the soaked peanuts. Pressure cook them with fresh water and salt for 3-4 whistles, or until tender. If using a pot, boil until tender.
- Temper the spices: Heat the oil in a skillet or wok. Add mustard seeds and let them splutter. Then add urad dal and red chilies and fry until the dal turns golden brown.
- Add aromatics: Add asafoetida and curry leaves. Sauté for a few seconds until fragrant.
- Combine and serve: Add the cooked peanuts and salt to the skillet. Mix well. Stir in the grated coconut. Serve warm or at room temperature.
