Peanut Sundal: A Classic Indian Snack

Peanut Sundal is a popular South Indian snack, especially during festivals and religious occasions. It's a simple yet flavorful dish made with boiled peanuts, a tempering of spices, and fresh coconut. This protein-packed snack is not only delicious but also incredibly easy to make.

Yields: 4 servings Prep Time: 10 minutes (plus soaking time) Cook Time: 20 minutes

Ingredients:

  • 1 cup raw peanuts
  • Water, for soaking and cooking
  • 1 tablespoon oil (coconut oil recommended)
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal (split black gram)
  • 2-3 dried red chilies, broken
  • A pinch of asafoetida (hing)
  • 1 sprig curry leaves
  • 1/4 cup grated fresh coconut
  • Salt to taste

Equipment:

  • Bowl for soaking
  • Pressure cooker or pot
  • Skillet or wok

Instructions:

  1. Soak the peanuts: Rinse the peanuts and soak them in enough water to cover them for at least 4 hours or overnight.
  2. Cook the peanuts: Drain the soaked peanuts. Pressure cook them with fresh water and salt for 3-4 whistles, or until tender. If using a pot, boil until tender.
  3. Temper the spices: Heat the oil in a skillet or wok. Add mustard seeds and let them splutter. Then add urad dal and red chilies and fry until the dal turns golden brown.
  4. Add aromatics: Add asafoetida and curry leaves. Sauté for a few seconds until fragrant.
  5. Combine and serve: Add the cooked peanuts and salt to the skillet. Mix well. Stir in the grated coconut. Serve warm or at room temperature.

  • Adjust the number of chilies to control the spiciness.
  • You can add a pinch of turmeric powder for color and added health benefits.
  • For a tangy twist, add a squeeze of lemon juice at the end.
  • You can also add finely chopped green chilies or ginger for extra flavor.
