Chickpea and Turmeric Curry

This chickpea and turmeric curry is a vibrant and nourishing dish celebrating wholesome ingredients and aromatic spices. The creamy chickpeas, infused with the golden goodness of turmeric, create a comforting and flavorful experience.  

With just 15 minutes of prep time and 30 minutes of cooking, you can quickly whip up this delicious chickpea and turmeric curry that serves 4. It's a recipe that's both simple and satisfying.  

 Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5 oz) can of diced tomatoes, undrained
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1/2 cup coconut milk (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)  

Equipment:

  • Large pot or Dutch oven
  • Cutting board
  • Knife

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.    
  2. Add the chopped onion and cook until softened and translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
  4. Add the ground cumin, coriander, turmeric powder, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly, until the spices become fragrant.
  5. Pour in the diced tomatoes, chickpeas, and vegetable broth. Bring to a simmer.
  6. Reduce heat, cover, and cook for 20 minutes until the chickpeas are tender.
  7. Stir in the coconut milk (if using) and season with salt and pepper to taste.
  8. Garnish with fresh cilantro (if using) and serve hot with rice, naan, or your favourite grain.

Tips & Variations:

  • For a richer flavour, roast the chickpeas in the oven for a few minutes before adding them to the curry.
  • Add other vegetables to the curry, such as spinach, kale, or sweet potatoes.
  • Adjust the level of spice by adding more or less cayenne pepper.
  • To make this dish vegan, omit the coconut milk or use a vegan alternative.
